Super Nacho Recipe

There came a time in our early years of marriage, juggling school, art, and work when I began making note of all the easy dinner recipes we loved. I needed to have back-up on those days when suddenly I look at the clock and it's already time for dinner or I am soooo hangry that I need to make food or my husband may not survive his return home. Since we tend to eat Asian and Mexican food 90% of the time, Super Nachos is a pretty obvious solution for a quick dinner menu and definitely one of our top favorites.

SUPER NACHOS 

INGREDIENTS: 

  • tortilla chips

  • 1 lb ground turkey

  • 1 can black beans (rinsed)

  • small can sliced black olives 

  • 1 bell pepper (chopped)

  • 1 onion (chopped)

  • 1.5 cups shredded cheese (more if desired) 

TOPPINGS: (optional)

  • green onions (chopped)

  • avocado 

  • favorite hot sauce or salsa

  • sour cream

DIRECTIONS: 

Preheat oven to 350' degrees

Prepare your ingredients: I usually start off by cooking my ground turkey, I cook it in this seasoning recipe, until it is nice and browed and cooked all the way through. Then set it aside. Next get I the rest of my toppings prepared and grab a baking sheet and I begin layering my nachos. 

Start with a good layer of chips, we get supper particular and try to get every inch of the sheet nice and covered with chips, then I evenly layer on my cooked ground turkey, black olives, black beans, onions and bell peppers. Sprinkle a good layer of cheese over it all!

Next we usually repeat that step for a second layer of nachos. However, if you are satisfied with just one layer then you are ready to put them in your preheated oven for about 15 mins. Keep an eye on your nachos, because once the cheese is nice and melted they are ready to be taken out. 

Carefully scoop out your nachos and top them with whatever your heart desires. My favorites are Cholula hot sauce, avocado and green onions!
