These past few morning have been all the things you dream about when fall rolls around. Chilly mornings, fog in the air, and you're left with thoughts of warm soup and crunchy bread to warm your belly. Well at least you can imagine that's what I'm dreaming about everyday.
So when it comes to comfort food on a chilly day some may think that a good 'ol bowl of chicken soup or something of the like is on my mind, but no you would be wrong. When it comes to cravings you can find me dreaming of egg drop soup. Maybe it's like I said in this post about our "staple"foods, but this Asian delicacy is all mine when I'm feeling down or chilled to the bone. If you've never tried to make your own don't be intimidated, there are a few simple tricks that make all the difference.
I have always tried to be aware of our monthly grocery budget while trying to be conscious of what we are putting into our bodies. Eating organic + all the stuff that comes with reading labels sometimes becomes exhausting to me so I'll just pick up whatever is on the shelf and begrudgingly head home knowing I could have made a better choice. For awhile this kept happening with stock, I would just pick up a prepackaged carton of veggie or chicken stock/broth but picking and organic/natural one can cost 4+ dollars. When suddenly I realized I could easily make my own (light bulb moment)!
I tried a few new recipes lately and I have to say that I fell in love with these two. These Butternut Squash & Couscous patties were sooo flavorful and paired with the Broccoli Salad made the perfect warm weather meal.
Right now the trees are in full bloom. The sun is shining and my heart is happy. Something about all this sun after so much winter makes me want to bust out the bbq and some chilled salads, so I felt like I had to share this recipe with you all.
