This sauce is so simple and great, no need to go buy Enchilada sauce anymore! We tried making this sauce and after the first time we haven't gone back to store bought. The flavors are rich and the steps are so incredibly simple.
1 tablespoon of oil
2 or 3 tablespoon of red chili powder
1 tsp onion powder
1 tsp garlic powder
1/4 or 1/2 cup of flour
1 cup water *more if desired (note: you can use chicken stock instead of water if desired)
Over medium to low heat, add oil to sauce pot, mix flour, red chili powder, garlic, onion powder and water. Whisk together continually until sauce thickens. A
dd water till you get the right consistency then simmer for 15 mins.
* sometimes I double this recipe and store extra sauce in fridge up to 2 wks.
