HOMEMADE PICO DE GALLO RECIPE
This year I decided to try some new fresh herbs in our garden and one of those was cilantro. I love cilantro, I know that cilantro is one of those things that you either love or hate. I heard that it could possibly be genetically linked that you either enjoy the flavor or you think it tastes something like soap, but what do I really know... Oh that I like it, so my obsession will continue to this homemade pico de gallo :)
Pico is a great topping for some steak or chicken or even your eggs in the morning, but for this batch we ate it as a simple side with some chips. I love how fresh it is and so quick to whip up for a party or snacking pleasure. I'm just waiting for our tomatoes, Jalapeño and onions to be ready to pick so we can make a completely garden fresh pico, well except for the limes.
Pico De Gallo Recipe:
Ingredients:
1 white onion, finely chopped
4 ripe plum tomatoes, finely chopped
2 or 3 jalapeño peppers, seeded and finely chopped (depending on heat level desired)
½ cup fresh cilantro leaves, chopped
1 tablespoon fresh lime juice + zest of one lime
Salt to taste ( I like to add a little garlic salt or garlic powder for a little twist)
Directions
Mix all prepared ingredients together, stir to combine. Allow to chill in the fridge for 30+ minutes to allow ingredients to incorporate.
