CRANBERRY COCONUT & MACADAMIA OATMEAL COOKIES

These cookies are quickly becoming a favorite of mine. 

They aren't too sweet and can be considered a sort of breakfast cookie if you would like. There are eggs and oats in them so that makes them ok to eat for breakfast right? If I were to be completely honest here I would have to say that baking for some reason, scares me a little bit. I always love cooking but when it comes to baking I always think that I'm going to mess something up. Maybe its the fact that I tend to be terrible at following directions and I always want to change something. This drives Marcus mad but I just blame it on my creative side.

So with that being said, I did of course make this recipe my own and adjusted... well almost everything 
Begin by preheating the oven to 350 degrees.  Mix together butter and brown sugar. Then add vanilla and eggs and mix together. Next, add spices, flour, baking soda and salt, mix well.
Add oats and mix together
 Add macadamia nuts, coconut and cranberries, gently mix together until evenly distributed.
Place about 2 tablespoon size scoops of dough on a cookie tray and bake for 10-12 mins or until golden.

Ingredients: 

  • 3/4 cup packed brown sugar
  • 1/4 cup butter, softened
  • 1 1/2 teaspoon vanilla extract
  • 2 large egg
  • 1/3 cup all-purpose flour
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup oats (Old Fashioned or quick-cook)
  • 1/3 cup cranberries, dry sweetened
  • 1/3 cup coarsely chopped macadamia nuts
  • 1/3 cup shredded coconut
