caprese salad, bruschetta style

 I love Living Basil, its fresh and the fact that you can just submerge the roots in water and it continues to grow.. well it cant get much easier than that.  With this delicious basil in the kitchen and the heat pouring into our house the husband and I needed a little pick me up. 




I got a fresh Baguette from a local bakery here in Bozeman and some fresh mozzarella. 
 Speaking of mozzarella, I hear its fairly easy to make it yourself so hopefully my attempt at some homemade mozzarella will be appearing soon :) 


The finished product was a delicious and easy snack. I simply cut thin slices of the baguette, 
topped it with a slice of tomato, basil leaf and fresh mozzarella.
 I then drizzled a little olive oil, balsamic and a little pepper to finish. 
A simple easy snack or meal if you prefer. 


there were a few more on this plate...but we inhaled them before I thought to snap a photo. 
What can I say they were just a little to good.
