SPRING SALAD + HOMEMADE HEALTHY RANCH DRESSING

It's finally Spring, which means, sun instead of rain, birds chirping, flowers budding everywhere and delicious food. It seems like when Spring finally comes around my body is screaming for some greens instead of everything else that was trying to keep me warm during the winter. One of our recent favorites is a huge salad topped with grilled chicken or leftover steak. To top our salads are: radishes, baby portobello mushrooms, cucumbers, arugula, spinach, peppers, tomatoes and green onions. They are the best, but this dressing has me feeling all good about it's creaminess factor.

Ranch Dressing Recipe:

1/4 cup plain greek yogurt

1/4 cup olive oil mayo

1 tsp dried dill

1 tsp garlic powder (less if you're not that into garlic.. Im obsessed)

1/2 tsp onion powder

2 stalks chopped green onion

few dashes of pepper.

Whisk together and allow to sit for an hour or so to let the flavors develop. Note: thin down with milk if you want a slightly less dip like dressing. What are some of your favorite salad combinations, I always love some new inspiration!
