MINT & LIME INFUSED WATER
I started becoming more and more obsessed with infused water last summer. I made this recipe and I felt like it encompassed everything summer is about. It was bright, fresh and colorful, after that first sip I was hooked. I kept trying different combinations and I think that is what I love most about infused water. You can really use almost anything and the flavors are ever-changing so you never get bored with your water.
This year our mint plant is going out of control!!!! So I have been trying to find new ways to use it so that it doesn't keep trying to go to seed on me. It took me a minute to have that "ah ha" moment when I realized I kept skipping over using all this fresh mint to make some infused water.
So what does one do when they realized they have been missing an important opportunity? ....
You grab whatever container you have on hand, for me it was my trusty mason jar stash. A bunch of fresh mint and some limes.
I whipped up this little batch and then let it sit in the fridge for and about and hour... I may or may not have forced myself to become distracted so I didn't wait impatiently in front of the fridge the whole time.
