HOMEMADE GRANOLA

I am not a big breakfast eater. For some reason I cant eat a big meal right away without feeling a bit sick, so I tend to eat these breakfast shakes. But for whatever reason there is an exception when it comes to granola. 

Growing up my Grandmother, my Aunts & Mom always made this granola and it is my favorite. So the other day I was feeling a little nostalgic and wanted to create that "home" feeling and what better way to do that but through food, am I right? The best part of this recipe is that it can be adapted to your tastes by changing up the ingredients a bit or you can make it gluten free with a few substitutions. 

 Granola Recipe: 

Preheat oven to 350 degrees 

Melt in pan:

1/2 cup oil (I used coconut oil)

1 stick butter

2 Tb Vanilla

1/2 cup brown sugar

1 cup honey (sometimes I do 3/4 cup honey & 1/4 molasses) 

1/2 tsp salt 

In a large roasting pan mix together:

2 lbs rolled oats (about 11 cups)

1/2 cup sesame seeds

1 cup chopped nuts

 *(I like almonds or walnuts but you can use whatever)

2 cups grape nuts (omit for gluten free)

1 cup wheat germ (omit for gluten free)

*(I use flax seed instead sometimes)

1 lb wide flake coconut

1 cup sunflower seeds 

2 tsp cinnamon (or more if desired) 

Directions: 

Mix thoroughly together melted sauce and dry ingredients. 

bake in shallow pan approximately 45 to 1 hr or until golden brown.  

Make sure to stir every 10 minutes until done. 

After granola has baked and then cooled add 1 cup raisins or chopped dates etc...
