GLUTEN-FREE MINI BANANA LOAFS

Here is a little recipe for your Memorial Day. I hope you are able to spend it around people you love and I want to say thank you to everyone who has served in our military. I am forever grateful! 

INGREDIENTS

2 cup

gluten-free baking flour

1 tsp

baking powder

salt

 cup

butter

 cup

 sugar

egg

, lightly beaten

3 tbsp

maple syrup

ripe bananas

, mashed

1/2 cup walnuts, chopped

DIRECTIONS: 

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 x 5 inch loaf pan.
  2. In a large bowl, combine flour, baking powder, and salt. In a separate bowl, cream together butter and sugar. Stir in eggs, maple syrup, and mashed bananas until well blended. Add the banana mixture to the flour mixture; mix until just combined. Pour batter into prepared mini-loaf pans.
  3. Sprinkle tops with chopped walnuts
  4. Bake for 20 to 30 minutes until a toothpick inserted into center of the loaf comes out clean.
