GLUTEN- FREE MINI BANANA LOAF RECIPE

I have a little secret to share, I have an addiction to small "mini" sized things. They are just so cute, walking through Target can be a nightmare because they do such a good job of having adorably packaged mini sized items. "Sure I could use that small sized lotion, might as well throw in that adorable tiny bowl thingy that I know I could use somewhere..." Please tell me I'm not the only one that gets caught up in the mini madness. So to further serve my mini addiction why not share this Mini Banana Loaf recipe. 

Ingredients: 


2 cup gluten-free baking flour

1 tsp baking powder

1⁄2 tsp salt

1⁄2 cup butter

1⁄2 cup sugar

2 egg, lightly beaten

3 tbsp maple syrup

6 ripe bananas, mashed

1/2 cup walnuts, chopped

DIRECTIONS: 

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 x 5 inch loaf pan.
  2. In a large bowl, combine flour, baking powder, and salt. In a separate bowl, cream together butter and sugar. Stir in eggs, maple syrup, and mashed bananas until well blended. Add the banana mixture to the flour mixture; mix until just combined. Pour batter into prepared mini-loaf pans.
  3. Sprinkle tops with chopped walnuts
  4. Bake for 20 to 30 minutes until a toothpick inserted into center of the loaf comes out clean.
