BUTTERNUT SQUASH & COUSCOUS PATTIES WITH BROCCOLI SALAD

I tried a few new recipes lately and I have to say that I fell in love with these two. These Butternut Squash & Couscous patties were sooo flavorful and paired with the Broccoli Salad made the perfect warm weather meal. 

BUTTERNUT SQUASH & COUSCOUS PATTIES

Ingredients:

Peeled & cubed butternut squash- 1lb

Couscous- 3/4 cup cooked

Fresh Ginger minced- 1tbsp

Ground Cumin- 1 tsp

Masala seasoning- 1 tbsp

Fresh Cilantro- 1/2 cup chopped

Salt & Pepper to taste

Steps:

Boil the cubed Butternut Squash in some water for about 10-15 until all cooked. Mash it and keep aside

-Bring a cup of water to a boil and add the couscous. Mix well, cover with a lid and switch off the heat. Let it sit for about two minutes. Fluff it with a fork.

-Mix cooked couscous into the squash along with the ginger, all the spices and cilantro.

-Take a small portion in your hands and make a ball then gently flatten to form disks. 

-Heat about 2 tbsp of oil in a non stick pan and swirl the oil all over. Place the patties in a single layer.

-Keep the heat on medium and let it develop a golden color on one side before flipping and repeat the process for the other side too.

BROCCOLI SALAD

Ingredients:

Apple Cider Vinegar- 3 tbsp

Olive Oil- 1 tsp

Dijon Mustard- 2 tbsp

Honey- 1 tbsp

Pepper- 1/2 tsp

dash of salt

2 small heads of broccoli- coarsely chopped 

1/4 red onion finely chopped 

1 Green Apple - cut into small chunks 

Steps:

-Whisk together apple cider vinegar through salt. Then add chopped apples, broccoli and onions. 

Mix together and chill in the fridge until ready to serve.
