SEMI-HOMEMADE | APPLE PIE
I have never been a huge sweets person, but all that changes once the holidays approach. And there is nothing better than a good pie! Growing up the counter would be lined with all sorts of homemade pies that the family brought over. Everything from meringues & banana cream pies to traditional apple and pumpkin. My mom and grandma make the best flaky homemade pie crust and even my sister has mastered the art, but wither my own impatience or general "lack of baking" skills I have turned to the good old semi-homemade way of doing things.
APPLE PIE
(adapted from Betty Crocker's Cookbook)
Ingredients:
- Prepared Pastry Crust
(you want to get the two-crust pie crust, one for the top & bottom)
- 3/4 cup sugar (I use half brown sugar & half white)
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon cinnamon
- dash of salt
- 6 cups thinly sliced tart apples (about 6 medium apples)
- 2 tablespoons butter
Directions:
Preheat Oven to 425 degrees. Make sure your crust is not frozen,
unroll and lay first layer in 9 inch pie pan. Mix sugar, flour, nutmeg, cinnamon and salt.
Stir in apples, mix well. Pour apple mixture into pastry lined pie pan. Dot with butter and
cover with top crust. Pinch together pie crust edges to seal. Gently slit a few lines into the top
pie crust to allow steam to escape. Cover edge with 3 inch strip of aluminum foil to prevent
edges from burning. Remove foil last 15 mins of cooking time. Bake until crust is
brown and juice begins to bubble through slits in crust. About 40-50 mins.
