SPICY ITALIAN SAUSAGE & VEGGIE SOUP
One thing that I love is a good soup.
There is nothing better than the satisfaction of whipping up a quick soup and enjoying it with a slab of crunchy bread and butter. Maybe thats just me and maybe now that its the new year we will skip the butter, but I can not say I will do this for sure I do love bread and butter.
"Spicy Italian Sausage & Veggie Soup"
Ingredients:
3 potatoes (diced)
1lb italian turkey sausage
2 tomatoes (diced)
4 carrots
1 onion
1 cup peas
2 cloves garlic (chopped)
1 teaspoon pepper
1/2 teaspoon salt (more or less if desired)
1 1/2 teaspoon basil
1 1/2 teaspoon oregano
1 tablespoon olive oil
dash of cayenne pepper (more if a spicier taste is desired)
4 cups stock (you could use veggie/beef or chicken)
Directions:
Add oil and brown sausage, when the sausage is done add the chopped onion/garlic/potatoes. Saute over medium heat for about 5 mins or until onions are translucent. Then add the rest of the ingredients and simmer for about 20-30 mins or until carrots and potatoes are cooked through.
