FOOD FOR THE BUSY BODY...that means its a recipe
This is the easiest recipe of all time. And when I say easy I mean... E.. A..S..Y!
It's almost embarrassing how fast this is to put together. I think the most time consuming part
is frying an egg and folks, thats
optional. Ok now that that is out of the way here is the recipe.
Don't freak out, but there is a whopping 4 ingredients, ok 5 if you add the egg.
In the Crockpot, throw in:
2 -4 Chicken breast (I put them in frozen)
1 jar salsa
1 can black beans (drained)
Rice
Throw all of the ingredients (except rice) into the crock pot. Cook on High for 4-5 hrs (even if the chicken is frozen) or Low for 5-7 hrs.
Once the chicken is cooked use a couple of forks and shred the chicken.
Serve over rice and if you're feeling daring place a fried egg on top.
I made this the other day as I had 10 mins between classes. It was so nice to come home and eat something filling before hitting the books once again.
