ROASTED VEGGIES vs SCHOOL
















Today has been a day of repeated interruptions. Mostly including the dialogue inside my head telling my what I should be doing (like studying) and instead I keep finding distractions. But today one of those distractions lead me to some tasty bites... roasted veggies.

If you have never had roasted veggies or aren't a huge fan treats from the ground, I'm telling you right now you have to try these.
One of my favorite things about roasted veggies is with only a little olive oil, salt and pepper you can make any veggie into roasted deliciousness. 

Tonight I had zucchini, carrots and red potatoes. All you have to do is cut them up into relatively similar sizes so that they cook evenly. Then drizzle olive oil over all of the veggies. Generously sprinkle salt and pepper and any other spices that you would like. I added a little onion powder since I didn't have any onions on hand and some garlic powder because, well I'm a little obsessed with garlic. 

Then pop them into a 400 degree pre-heated oven for 30-40 mins or until crispy and golden. You can stir around about half way through cooking or if you forget like I do quite often they are still just as tasty. 

side note: another favorite of mine to roast is broccoli and cauliflower. 
As soon as they are out of the oven sprinkle a little grated cheese on top and then enjoy as a easy side dish or dinner.
