THE BEST PASTA SAUCE

I was sitting home alone while Marcus was at work, stomach began growling (audibly) and all I wanted was pasta. I decided to do something meatless, which is odd for me if you know me. Some people say it has something to do with your blood type, but all I know is from the moment I wake my stomach is craving protein. But for whatever reason that night I wanted something creamy and delicious (while using the things I already had at hand). So like most nights I googled up some creamy pasta sauces and stumbled upon this amaaaaaazing recipe. 

I was so excited to make it that I forgot to take pictures until I already devoured my bowl full of deliciousness. I will say that it smelled amazing and the leftovers were to die for. Marcus always turns up his nose to meatless dishes, so when I was eating leftovers a few nights later this surprising conversation ensued...

me: eating 
marcus: walks over.. "what are you eating".. then makes a face 
me: "try a bite"
marcus: "what is that!" 
me: "the pasta I told you to eat" 
marcus: "well you didn't tell me it was that good..." 
me: "uhhh yes I did, do you want the rest?" 
marcus: sheepish smile "yes" "you should make this all the time"

Needless to say this one is a keeper. I did make a few modifications to cut down on cream by substituting with 1/2 milk and then thickened it with a few tbs of flour, but next time I'll try it as is. 

Recipe: 

1/2 lb of mushrooms (sliced) 
1 sm onion (diced)
2 cloves of garlic (minced)
1/2 cup chicken stalk 
1 1/2 cup cream 
2 tbs fresh dill (chopped) (I used dried dill that I had on hand and it was still great)
salt and pepper to taste

Pasta for 4 (I used fettuccine noodles)



Directions: 

Heat pan and saute onions, mushroom, and garlic with a little olive oil until soft and golden. Add chicken stalk, cream, and dill. Season with salt and pepper. Simmer for 5 mins or until thickens to your desired thickness. 

Yep, it really is that easy, then pour sauce over pasta and enjoy!
