saturday dinner

So today was finally warm again and I spent my morning reading in the sun 
while sipping coffee and reading The Circle Trilogy by Ted Deckker. Then I finally felt motivated to get a little yard work done until the thunderstorms rolled in and brought me inside to do some much needed cleaning. 

Side note: when a thunderstorm comes rolling in make sure you bring in all electronics... my phone got a nice dousing of water and is currently soaking in rice. Fingers Crossed!!! 



So when dinner came around I was not feeling motivated to make a fancy meal. Marcus suggested Super Nachos which is a favorite go to. It is so easy and delicious and ours is typically topped with whatever is sitting in our fridge and cabinets. 

Super Nachos

Start by cook desired meat on stove and season with taco seasonings (our meat tonight was GROUND TURKEY). I always make my own seasoning with cumin, garlic, a little salt and chili powder. Next, chop up all of the other toppings that you want on your nachos. Our "go to" items are usually BLACK BEANS, OLIVES, ONIONS and PEPPERS. Then, Line a baking tray with a even row of TORTILLA CHIPS, and top with all of your chopped veggies and meat. Then cover layer with grated cheese, we always continue with one more layer completing all of the previous steps. Then pop it in the oven on the middle rack and broil until all the cheese is nice and melted. Serve with GUACAMOLE and Salsa, so easy and delicious!!! 


Ingredients: 
Taco seasoning 
Ground meat
1/2 onion
about 1/2 cup Olives 
1/2 can black beans
Tortilla chips 
Cheese (cheddar, pepper jack...)
